4 – Egg whites
1 cup – Button mushrooms, roughly chopped
1 cup – Spinach, roughly chopped
1 – Onion, caramelised
1 tsp – Dried oregano
1 sprig – Basil leaves, for garnish
1 tsp – Pink chilli flakes
Salt and pepper, to style
*Separate the egg whites from yolks and hold in a bowl. Whisk nicely.
*Chop mushroom and sauté on a skillet with some salt and pepper. Subsequent, wash the spinach leaves and saute for a couple of minutes until they launch water. Sprinkle some salt and blend nicely. As soon as finished hold apart.
*Hold the caramelised onions prepared.
*Warmth a flat skillet, drizzle some oil, let the pan warmth up and whisk within the egg white. Unfold it evenly on the pan. Sprinkle the mushroom, spinach and onions on prime. Add the seasoning. Shut with a lid and hold it on low warmth.
